Not sure if this issue is persistent in setups with more than 2 monitors, but there seems to be clipping of the "Esc" menu and parts of the Fabricator items are clipped off (In my case, it's the Titanium ingots in the basic materials of the Resource section.)

Take a good look :

Fabricator menu has cutoffs https://gyazo.com/b6d4b06ee92a8c98adf31f4a665d15ff

As you can see, it's not really something I can or know how to solve, as the game currently doesn't have a menu or HUD scaling options. I also don't think I can progress in the game very far without this being fixed in some sort of way.

EDIT : THERE IS A SOLUTION!

Here is how to do it!

Step 1 : Go into the Fabricator menu (https://gyazo.com/f0a6d19e17fb9d801a161053c9406cfc)
Step 2 : Walk backwards! I usually just go back to about where the ladder is! (https://gyazo.com/d8c08274e833828db5bc9fc77910aa56)

The full menu for the Fabricator is now accessible (although a bit small!)

I seem to recall hearing about a similar problem. I think someone said they had three monitors and typically played games with the image stretched across all three monitors and were experiencing some issues like the ones you described. Is that similar to how you game? Do you have three monitors and stretch the image across all three when you game?

I fear not enough folks play games with the resolution stretched across 3 monitors for the developers to add specific game features designed to handle this. You may have to play the game on only one monitor. Or, alternatively, you might try dropping the resolution to a setting that is one "click" down from your max resolution. Yes, you'll have some black space on the left and right of your monitors. But when I pulled up the fabricator at that slightly lower resolution, the fabricator wasn't cut off.

I actually found a solution to the Fabricator menu not working! :D
