When it is released, chances are you will find servers that are NS:C only (prolly say so in the server name), and servers that run both. Running standard NS only has no real point, since NS:C transitions right into standard as the number of players grows.
If you can't find a NS:C only server, join a standard server with less than 12 players, roughly the point at which standard maps are cycled in.
You can also just pay attention to the map names. co_* maps are combat.

co_eclipse would be played with the NS:C gameplay type.
