My vote goes to veil. So many long hallways and right angle corners, it's exactly what you need to practice. I think veil was the first map where I really started to use bhop, it was quite effective too.
Id say ns_nothing. You have a long, flat hallway that runs round red room, then the big open ground in viaduct hive. Eclipse and veil have more slopes though, which are good to practise getting acceration off.

i've made a map which is basicly just one very big room. by using it with sparky utilities v1 (well, a recompiled version that'll work with NS), you can bring up a speedometer to see how good you are. it's good for learning basics. here's a link: <a href='http://home20.inet.tele.dk/plams/bunny.zip' target='_blank'>bunny.zip</a> (havn't checked the .exe for virus. further instructions are in the file)
but for using bunnyjumping effectivly you need to practise it on one of the NS maps. i.e. i've got the basics quite well now, but i spent most of my NS playing yesterday crashing into walls - my average speed using bunnyjumping was probably 50% of the topspeed instead of 180% as it should be:)
I would suggest starting on other mods such as default HL or TFC. When you get the hang of it, eclipse or veil. Am I the only one who likes bast? Going through tram tunnel, up to refinery is good practice with ramps (which are obviously harder) and you can go to the RT in refinery, then back to tram.
