  You might be able to filter only maps with the co_ or ns_ prefix, but I haven't tried anything like that. As Hambone mode is a server variable, mp_ironman 2 IIRC, I don't beleive you can filter it out.

  Using 3rd party utilities (such as all seeing eye, etc) you should be able to short by mode as well (they generally allow filtering based on server cvars). As of now the steam search doesn't have this ability.
