To be more specific, a paradox is a logical statement which is always contradictory.
The riddle is: "everything I say to you is a lie." Is he telling you the truth or is he lying?
If it were a paradox, then he can't be telling the truth, and he can't be lying. He is lying, and the situation still remains logically correct.
If he's lying, then the truth must be the negation of his statement, not the opposite. The statement is "everything I say to you is a lie". The opposite is "everything I say to you is the truth". The negation is "NOT everything I say to you is a lie."
If he's lying, then the statement "not everything I say to you is a lie" is true. That means his next comment could be the truth. Or the next one. Or the next one. It doesn't matter; eventually, there just has to be one thing he says that is true.
Technically speaking, the scenario in which he is telling the truth is a paradox, since it is contradictory. The puzzle as a whole is not; it has a solution which is logically correct and not contradictory.
The other example you brought up, as I mentioned, is not a paradox either. It's even further from being a paradox than the original.
To clarify: there's a room with two pathways and two guys. One path leads to certain death, and one is safe. Both men know which pathway is which. One always lies, one always tells the truth; you can't tell which is which, what should you ask?
This isn't a paradox. If you ask either of them "if I ask the other guy which path to take, what will he tell me?" you will get the same answer from either of them. Not contradictory.
What IS a paradox is the following:
The following statement is true: The proceeding statement is false.
