The short version is because to do that you need a completed set of art assets including, but not limited to, levels, textures, props, character models, weapon models, sprites and HUD. Development on NS2 hasn't being going on that long; you can't expect the team to have completed enough for that yet to be possible.
The DI video was just a demonstration of the DI tech. It had some early texures, but nothing else that would be sufficient for proper in-game screenshots.

That was a tech demo. I'm not sure that was even done in the Source engine. Only one (still in design) feature and a handful of art assets (which might have been placeholder art) out of hundreds.
Developers rarely release screenshots until the game is nearly complete.

Yes the dynamic infestation video we showed was using my engine, which can load HL2 BSP levels. We used that instead of Source for the initial experimentation with dynamic infestation since my engine is designed to make it easy to rapidly prototype things (not to mention we hadn't gotten access to the Source engine yet). We're also using my engine for the texture tool we mentioned at the end of podcast #5, so you'll be seeing more of it soon.

We can't wait to show you in-game screenshots in the HL2 engine, but we're not ready yet. As soon as we are, you can bet we'll be posting them as news and sending out mail to the list though!

Maps are the last thing that will be made. Plus I believe they said that they will let the community take care of the map problem hence they are releasing the NS2TR, so we can have a basic set of assets to make maps.
In every game development that has been open enough for a community to follow, I have seen these kinds of requests. IMHO, it demonstrates a lack of understanding for the development process.
If anything, I hope Unknown Worlds holds on to screen shots that are in game to use as "exclusives" for reporters at places like PC Gamer so NS2 get maximum press time and exposure to the gaming masses.
