Well... I've seen half a dozen videos, each 20 minutes long with tons of combat in it. It looked a lot better than W1. I can tell you more tomorrow, hopefully...
If you put any faith on the fellows over at 4chan /v/ channel it seems combat mainly consists of rolling from everything and then pausescreen to throw a spell and take potshot strikes with melee until you get a finishing move with or without QTE.

I finished the prologue today and you will die many times if you go into it with TW1 mentality. Just mashing attack will get you killed really quickly. You have to think about groups of enemies now, attacking one and you'll take increased damage getting hit in the back. Really need to dodge and parry a lot and use your signs smartly because you'll run out of vigour otherwise. It's still a ###### load more fun than the first one.
I got the CE too. ###### so much cool stuff in it.
It was awful in the first game- even after they re-did the script and voices. You'd get totally inappropriate words that <i>kinda</i> make sense in a kind of "script writer didn't know which word to use so opened up his Polish to English dictionary" way, but killed the immersion for me.
Except the fist fighters in the inn who scream "Your mother sucks dwarf c**k." That's just ace.

I hope that fights are challenging enough because Fallout 3 is just pressing V and hiding around corner. Oblivion was quite silly too. Only game that IMO had great combat system was ME2. (I'm biased, I like shooters :))

Personally, I really wanted to like the Witcher 1, but just couldn't, I also felt it was like a single player MMO. All the confined zones, invisible walls and loading screen between areas annoyed me. Games like The Elder Scrolls or Fallout with a huge open world, are more to my taste.
I got several hours into the witcher 1 twice and I can't remember what turned me off. Something frustrated me. Maybe it was too hard? It sounds like the sequel is at least as hard so I'm guessing it's not for me.

Most of the game is ridiculously awesome. From intro battle to chapter 1 and 2. I heard that chapter 3 might be disappointing. This game might get long series of DLCs done like ME2.
Best thing about Witcher 2 is that it's a RPG. Not Diablo "RPG" but real RPG. There are so many choices that you make each minute, they cumulate and affect each other that playing the standard way - like selecting ending in Fallout and going for it - is practically impossible. Company that develops such RPG has to develop few times more content than it'd have to for same length of the game. Replay value on the other hand is higher than just amount of missions/dialogs * amount of versions.
Use the rolling (space), Luke. I died few times in a row from just 10 nekkars but then after I started rolling properly and picking out single ones of them I had no trouble at all. Skill that reduced backstab damage from 200% to 150% or 100% is very useful.
Not even remotely. Even Kayran has to hit you like 3 times to kill you. Nekkar or easier monsters in no way kill you in 1 hit. If you get hit in the back it might take 30-50% HP but that's not really instagibbing. It might <b>seem</b> it's lost if you don't know about rolling (you can always roll out from the crowd attacking you). Then 1-2 s later you just die.
It's just different combat style. It's not AC where you can have 20 people around and selectively attack one by one evne though they all have surrounded you. Switch is painful but once you get accustomed to W2 it's flawless.

There was no indication that it was going to go back in time and play it out as a tutorial. Also, as mentioned, I thought it was just a recap of Witcher 1, which I've never played. Additionally, just the fact that you COULD choose them in whichever order implied it was not a tutorial that is best played from top choice first to bottom last. I feel that's just bad design and I have a few friends that agree with me.
To clarify, there are 4 responses you can choose from in a dialog where your interrogator wants to know about a certain day in your past. All these are as Align said, tutorials. However, as you can choose freely, you can end up being spat out into battle without as much as an area to try things out without dying for not advancing fast enough. As luck was, I chose that and I don't accept it was my fault for taking something other than the first one. The other ones (at least the first choice) lets you run around in a camp without any enemies stressing you right off the bat.

Assassin's Creed's combat is my favorite, mostly BECAUSE it is easy. I have better things to do than get frustrated by a single player game. 20 years ago, games had to be hard in order to inflate the time it took to beat them. These days, I prefer games with plenty of content instead of games that make you bang your head against the same content until you finally win.

The fighting is really effing hard. You usually get to fight 2-6 guys at once. Right now I can only handle that by using traps and bombs.
