Xbox - black squares flicker all over the screen and frame rate is unplayable

The game is so choppy that it is impossible to catch fish because the game is not smooth enough to zero in on them. It just jumps past them back and forth. Are there any options I can fix to smooth it out? I am not finding the graphics options. Am I missing them?
