Only the server needs to download it and install it. Clients can connect to the server as usual.
Well, how would one go about as to playing NS on a LAN with the most recent server-side patch?
Can a client download the patch and just stick it in his ns folder, then everything will be patched whenever this client hosts a game?
Or do the players on the LAN have to set up a remote, dedicated server?

In answer of your question, you are correct. Download the server-only patch, install it, and your NS server will be updated to 1.03 for the LAN (or whatever). Only the computer acting as the server should need the patch.
