I usually don't stock up on ammo at all, because I'm usually alien! nothing is better (kiding, I'm sure it can get better) than chewing on people who are humping the armory

I get 50|100 for my gun, 10|20 for my pistol. If there is an emergency, I never get any ammo at all, since I'll probably die before the emergency is over.
While some people wait until they are totally out of ammo to go to the armory, I walk by it occasionally, and grab a few clips. I don't really ever load up unless I'll be away from base for a while (such as guarding an outpost). Since it has been shown that loading up to full ammo actually makes one walk slower, I tend to stay away from the full ammo complement.
Max ammo when I have the time, especially later in the game as an offense chamber can take a lot of bullets. Also, the pistol always maxed for long-range fights, LMG when the skulks get close.
In urgent situations, don't load at all, if it's urgent enough that the comm starts screaming I don't expect to use even half of my spawn ammo before death.
Rambo missions (not running off without purpose, but a mission to get near a hive undetected): whatever I can get in case I run into resistance, but for me a successful rambo mission is one where I don't shoot at all, or at least not before I get a phasegate or siege into a hive. I even try to hide and let aliens run past without attempting to kill them if they don't notice me. An easy skulk kill is worth nothing compared to a siege next to the hive.
Oh, by the way, how much exactly does full ammo slow you down? I never timed it so I'd be interested in some official info.

Reason is I tend to use pistol a lot; as coprimary. Pistol is more versatile assuming good aim.
