did you add the file extension at all?
<b>record blah.DEM</b>
Odd that NS shuts down <!--emo&:(--><img src='http://www.unknownworlds.com/forums/html/emoticons/sad.gif' border='0' style='vertical-align:middle' alt='sad.gif'><!--endemo-->
give us some more info, what system specs, does it give you an error? etc <!--emo&:)--><img src='http://www.unknownworlds.com/forums/html/emoticons/smile.gif' border='0' style='vertical-align:middle' alt='smile.gif'><!--endemo-->
To record demos, it the command should just be record <demoname>
When you're done, you should type stop to stop the demo.
To play it back, you should type playdemo <demoname>
If you believe you've recorded one, you should have a file called demoname.dem located in your NS directory.
Additional note: sometimes when you record or stop a demo when people are actively using the voice comm, NS will crash. That's possibly what's happening to you.

Do NOT use the .DEM extension when recording a demo. It'll crash!!!1
You got to start it, and end it, when nobody's using the mic.
IE:
record demo1
stop
Tada <!--emo&:D--><img src='http://www.unknownworlds.com/forums/html/emoticons/biggrin.gif' border='0' style='vertical-align:middle' alt='biggrin.gif'><!--endemo-->
