Also, the reason your UV map is all jumbled is because the vertices are not perfectly lined up. I found the best way to line up the verticies is to grab the verticies you want to line up (one row at a time) and scale them to "0" on the appropriate axis.. Does that make sense?

Oof. it's helpful to label skinmaps for others, so they can tell what part goes where. Even just numbering the parts will at least show where they show up on the model.
