I have onboard 6 channel audio.
OR
My sound blaster 512 PCI....
Which should I use and why?
EDIT: For arguments sake I tried my onboard and my framerate went up in doom on an average of 5-10fps. Is this placebo effect or can a sound card actually boost that well.
EDIT2: I just ran a timedemo of Doom3, and it showed an average of 5fps boost.

If I know Carmack he's probably doing some tricks that speak directly to the hardware... not taking full advantage of the sound card's processor.
My other thought is that when it detects the low end sound card it reduces the sound quality (less playable cannels, more faked 3D effects, less post processing, etc.). This is similar to playing a game with a crappy graphics card and having it automatically lower the resolution and texture quality. So with more simplified audio it may play faster.
If it works, go with it! <!--emo&:)--><img src='http://www.unknownworlds.com/forums/html//emoticons/smile.gif' border='0' style='vertical-align:middle' alt='smile.gif' /><!--endemo--> But I'd be curious what results you get when benchmarking other games.
I think you got some Nforce board right? If yes, use onboard.
