I've beaten mostly every game I own, and have owned, which would probably be a number around 100, mostly SNES and Playstation games, if you count rentals it's probably five times the ammount. Games I never beat are games that I find to dull to continue in. I have maybe 10 I've ever owned, most are sports, so I don't exactly count them.. cause I don't know if you can beat a sports game.. can you? I dunno I've never played them more than 15 minutes or more than once a day.
Recently, the ones I've forgotten about include Viewtiful Joe, Zelda: Majora's Mask, Broken Sword, Grim Fandango, The Dig, Jet Set Radio Future, Advance Wars, F-Zero GX, PSO: Ep3.

Actually, I think the only games that I haven't beaten are Warzone 2100. Command And Conquer: Aftermath, Mechwarrior 2: Mercenaries (Too hard!), Warlords: Battlecry, and uh, I can't remember if I beat X-Wing or not. But it won't run on Windows XP so I don't have a choice <!--emo&:(--><img src='http://www.unknownworlds.com/forums/html//emoticons/sad.gif' border='0' style='vertical-align:middle' alt='sad.gif' /><!--endemo-->
I've beaten pretty much every game and demo that has passed through my hands, normally at least once... I'm a bit of a perfectionist about games.
Normally once I've completed it once I'll do it again with a challenge.
i.e. Halflife using only crowbar for as long as possible (I've killed an Icthyosaur (spelt right?) on highest difficulty. Dungeon Seige I solo'd using the Nature Mage (Zap got boring veeery quickly). Monk in BG2&ToB Wiz in BG1&2&ToB UT in Godlike (mostly fluke at the end, replayed soooo many times). Deus Ex using Melee weapons and Pistols only (though I cheated halfway through and started using a GEP as well... what? They're fun!) Thief 1&2 on highest difficulty (now going round a mates as much as possibly to do Thief 3 the same AvP without using smartgun mode/pred's stabby health thing/alien secondary vision (though I should have picked a harder one,all I could think of).
Not gonna list cos frankly I've forgotten half of them. I remember as a kid I'd hire out a game for a weekend/week, complete it, take it back, next one, complete, take it back etc They eventually ran out of games (that appealed to me, racing games really aren't my thing at all, make me yawn).

Reading that just inspired me to try to beat it without using any inventory items (this includes weapons, medpacks, augs, EVERYTHING except for keys). Either that or no skills, but that's kind of boring compared to the former.
Actually, I could do both, because all of the useful skills are item based anyways.
I actually hit that problem in university disco =o Originally I'd play a game until I finished it; no holds barred. Then when I was in uni I suddenly found myself just stopping in games as I neared the end... it irritated me but at the same time I just didn't care enough to go on. Mario Sunshine for example; great game but... I dunno. I just didn't care about seeing the ending or completing it. I just got far enough to really enjoy it and be at the gates to the boss then stopped lol.
That reminds me... megaman is sitting at the last boss of Megaman Battle Network 2. I should really finish it and get onto buying and playing 3 ^^;
